Zucchini Bread

I'm so glad you're back because this is a Pinterest recipe find! My Mom's garden exploded with zucchini and I knew I just had to share this recipe with you all. It was delicious and with the weather cooling down, I finally was brave enough to turn on the oven. Here's the link to the original recipe I followed.

What You Need
  • 2 cups flour
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1 tsp kosher salt
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 3/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 eggs, let them sit to get to room temperature
  • 2.5 cups zucchini. Grated.
  • chocolate chips (optional)

Instructions
  • Preheat oven to 350 F, and prep your loaf pan with non-stick spray. Set aside.
  • Add all ingredients to bowl and combine well. This will appear very thick, DON'T panic.
  • Add zucchini to bowl, and stir. Your mixture should become thinner at this point, I told you not to panic.
  • Pour batter into pan. Bake this loaf for 60-70 minutes. Like any other loaf/cake, bake until a toothpick comes out clean. I added 5 minutes each time and would check to see if it was thoroughly baked.
  • Let it cool, and it should slide out of the pan easily.
  • ENJOY!

There you have it! This was the first zucchini bread recipe I've tried and it was absolutely delicious. I can't wait to bake this again! Even if the husband doesn't eat it, I just bring it to work for my coworkers to enjoy.

Happy baking!
