I'm so glad you're back because this is a Pinterest recipe find! My Mom's garden exploded with zucchini and I knew I just had to share this recipe with you all. It was delicious and with the weather cooling down, I finally was brave enough to turn on the oven. Here's the link to the original recipe I followed.
What You Need
- 2 cups flour
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1 tsp kosher salt
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 3/4 cup vegetable oil
- 1 tsp vanilla extract
- 2 eggs, let them sit to get to room temperature
- 2.5 cups zucchini. Grated.
- chocolate chips (optional)
Instructions
- Preheat oven to 350 F, and prep your loaf pan with non-stick spray. Set aside.
- Add all ingredients to bowl and combine well. This will appear very thick, DON'T panic.
- Add zucchini to bowl, and stir. Your mixture should become thinner at this point, I told you not to panic.
- Pour batter into pan. Bake this loaf for 60-70 minutes. Like any other loaf/cake, bake until a toothpick comes out clean. I added 5 minutes each time and would check to see if it was thoroughly baked.
- Let it cool, and it should slide out of the pan easily.

There you have it! This was the first zucchini bread recipe I've tried and it was absolutely delicious. I can't wait to bake this again! Even if the husband doesn't eat it, I just bring it to work for my coworkers to enjoy.
