Beer Butt Chicken

I can't believe the first recipe I'm sharing is beer butt chicken. It's definitely a favorite in our house, and sure it turns out different every time. But wow, we love it. I don't want to be that typical blog that posts a recipe and tells you a life story behind it so, let's cut to the chase.

What you'll need:
1 stick of butter, room temperature
1 whole raw chicken
seasoning to mix into butter
1 beer can; half full 
Meat thermometer
Beer chicken roaster (I linked one below)
BBQ Sauce


Instructions:
1.  mix together your butter and seasoning. This time I used Jack Daniels chicken rub, and kroger poultry seasoning. Whatever is in your cupboard will work.
2. Rub down your chicken to coat it in the butter. It's optional to rub down the chicken under the skin. I will do this sometimes. I've learned when I'm doing this that having my chicken at room temperature helps the butter stick better. When my chicken is too cold the butter balls up and doesn't stick well.
3. Place your chicken on your beer can holder, I try to get it as far into the chicken as I can. Don't worry if your beer can crinkles as long as it's still upright.
4. Place on grill, I do indirect heat but have it close to the burners that are on.
5. This chicken took about 2.5 hours to roast. I will rotate it in the grill to try to get it all evenly cooked. I check the temperature throughout the entire chicken to ensure it's all cooked thoroughly.
6. Once my chicken is thoroughly cooked, you take your bbq sauce and lather your chicken. I always add a secret ingredient to my bbq sauce that makes any sauce perfect. I like to let it cook with the sauce to get a nice and crunchy skin to it. 
7. Once your bbq sauce is caramelized, I take it off the grill and coat it again with bbq sauce. I let the chicken rest for about 10 minutes for all those juices to absorb in. 
8. Carve your chicken and enjoy.
